Cheesecake Cioccolato e Vaniglia - Chocolate and Vanilla Cheesecakes

(scroll down for the english recipe)

Buona settimana a tutti!

Chocolate and Vanilla Cheesecakes

When I have time, I like to linger among the shelves of the large and well-stocked supermarkets, looking for something new. So, some time ago I noticed a refrigerated mouth-watering dessert. It was a cheesecake in the size of single portions in crème brûlée dishes, and was named after-dark cheesecake. I love cheesecakes and the idea of making them in jars immediately conquered me! I bought all the ingredients, and here are my cheesecake in a jar, very easy to prepare. Cheesecakes with chocolate and vanilla with a biscuit base with chunks of chocolate ... to enjoy while resting on the couch (and strictly after putting the kids to bed!)

The ingredients amounts I used are from a first glance estimation, so I can not really assess how many jars will be obtained with the given doses:

For the bottom:
150g chocolate biscuits
20g butter
a handful of chocolate drops

For the cream:
200g quark
50g mascarpone
seeds extracted from a vanilla pod
30g sugar

For the topping:
70g chocolate to 60-65%
30g water
20g sugar

1. Chop the biscuits with a food processor or place them in a plastic bag and break them well with a rolling pin; mix the biscuits with the melted butter, chocolate chips and distribute the mixture in equal parts at the bottom of the jares; press firmly, for example with the bottom of a glass.
2. Mix quark, mascarpone, sugar and vanilla seeds with electric beaters.
Divide the cream in equal parts over the layer of biscuits.
3. Add sugar to water in a small saucepan and bring it to boil at medium heat. Let then the compound get denser at reduced heating for a couple of minutes; remove from heat, add the chocolate after breaking it in small pieces and melt it, stirring with a silicone spatula. Let the compound cool for a while, then pour it as a cover on each baking dish.
5. Let the cheesecake rest in the refrigerator for 3-4h, or better overnight.

Have a nice week!
