Torta al cocco con frosting alla melagrana - Coconut cake with pomegranate frosting

Avevo in casa da tantissimi giorni una bella melagrana, un frutto che mi piace tanto nell'aspetto, ma che uso pochissimo. Ieri ho pensato di farci una torta, per concederci una colazione diversa dal solito e per non sprecare quella bella melagrana rossa e succosa :). Vi diró che il risultato é stato eccellente, il cocco si sposa bene con l'agro-dolce del succo di melagrana, ed il frosting con il formaggio, in alternativa a quello classico al burro (molto piú pesante) é buonissimo. Ho fatto ad occhio, quindi le dosi di quest'ultimo non sono precise al grammo! 

San Valentino.......
.........in fondo, non curandosi delle proposte commerciali sul modo piú appropriato per celebrare, e rifuggendo dalle omologazioni di massa,  trovo carino che un giorno l'anno si festeggi una giornata dedicata all'amore. Semplicemente, un'occasione in piú per regalare un gesto di attenzione ed indulgere in un momento di relax con coloro che amiamo.

La melagrana, per i mille semi succosi, di un rosso traslucido brillante, racchiusi in un involucro robusto, ha colpito l'immaginazione umana per essere un prodigio prezioso della natura; simbolo d'amore, di virtù, di prosperità e del vivere perfetto. Ed ecco che, un semplice dolcetto diventa un messaggio, a bocca chiusa :)  
Vi invito a provare questa torta, sono certa vi piacerà....W l'amore (tutto l'anno). 

Io, dedico questo dolcetto ad Adriano e Franca che hanno compiuto gli anni da poco, nell'attesa di riabbracciarli presto e di trascorrere qualche giorno in serenità, in quell'ambiente familiare, caldo ed accogliente, animato dallo scoppiettio del camino e dai profumi del buon cibo.  



Ingredienti
Per uno stampo a cerniera da 22 cm di diametro.

Per la torta
150g farina
65g cocco grattuggiato
150g burro morbido
100g zucchero
1 presa di sale
3 uova M
2 cucchiaini di lievito vanigliato
120ml latte di cocco



Per lo sciroppo di melagrana:
1 melagrana grossa e matura
2 cucchiai di succo di limone
40g di zucchero di canna

Per il frosting alla melagrana:
200g formaggio morbido tipo Phildelphia o Almette (in Germania)
circa 30ml di sciroppo di melagrana
circa 50-80gr zucchero a velo


Inoltre
Un lungo stuzzicadenti per spiedini

1) Preriscaldare il forno a 180 gradi. Mettere il cocco grattugiato in un mini pimer e tritarlo ulteriormente . Imburrare la tortiera e ricoprirla con un pó del cocco ulteriormente grattugiato. Lavorare il burro a pomata con le fruste, aggiungere lo zucchero e la presa di sale e montare fino ad avere una massa omogenea. Aggiungere le uova uno per volta continuando a montare (circa un minuto per uovo). Setacciare la farina con il lievito e mescolarla al cocco grattugiato. Aggiungere queste polveri al burro, in due volte, alternandole all'aggiunta di latte di cocco. Mescolare con una spatola finché gli ingredienti non siano amalgamati. Versare l'impasto nella tortiera, livellarlo ed infornare per circa 40 minuti (fate la prova stuzzicadenti, che dovrá risultare asciutto).

2) Nel frattempo preparare il succo di melagrana: tagliare la melagrana a metá e ricavarne i semi, con una centrifuga, estrarre il succo da circa 3/4 dei semi e mettere gli altri da parte. Dovreste ottenere circa 200-250ml di succo.

3) A questo punto preparate lo sciroppo di melagrana: Mettere in un pentolino dal fondo spesso lo zucchero ed il succo di limone, far sciogliere lo zucchero a fuoco lento, appena comincia a caramellare, aggiungere circa 200-250ml di succo di melagrana e fare addensare leggermente a fuoco medio.

4) Appena lo sciroppo sará pronto, preparare il frosting alla melagrana: con una frusta rendere il formaggio cremoso, incorporare circa 30ml dello sciroppo di melagrana e circa 50-80g di zucchero a velo per mantenere la consistenza cremosa. (Le dosi non le so esattamente perché ho fatto ad occhio, dipende da quanto viene denso lo sciroppo di melagrana e dal formaggio che usate).

5) Sfornare la torta, togliere l'anello della tortiera e con un lungo stuzzicadenti, fare subito sulla superficie della torta tanti buchi fin quasi al fondo (che andranno poi riempiti con lo sciroppo di melagrana). Far raffreddare.

6) Ripassare nuovamente con lo stuzzicadenti dentro ai buchi e versare sulla superficie della torta tutto lo sciroppo di melagrana rimasto, in modo da riempire i buchi fatti. Poi cospargere con una lunga spatola la superficie della torta con il frosting. Decorare con i semi di melagrana e scaglie di cocco. Far riposare almeno 3 ore in frigo prima di servire.

Coconut cake with pomegranate frosting


I had at home, since many days, a beautiful pomegranate, a fruit that I really like in appearance, but I use very little. Yesterday I decided to make with it a cake. I will tell you that the result was excellent, the coconut blends well with the bittersweet of the pomegranate juice, and the frosting with the cream cheese, as an alternative to the classic and much heavier butter frosting, is very good. I did it by eye, therefore the dose of the latter are not accurate to the gram!

Valentine's Day .......after all, without caring for the business proposals about the most appropriate way to celebrate, I find nice that one day a year there is a day dedicated to love. Simply a further occasion to give a gesture of attention and indulge in a relaxing moment with those we love.

I invite you to try this cake, I'm sure you'll love it ....Yeah, love (all year round).


Ingredients
For a 
22 cm springform pan. 

For the cake
150g flour
65g grated coconut
150g butter, softened
100g sugar
1 pinch of salt
3 eggs M
2 teaspoons baking powder
120ml coconut milk

For the pomegranate syrup:
1 large and mature pomegranate
2 tablespoons lemon juice
40g brown sugar

For the frosting pomegranate:
200g soft cheese type Phildelphia or Almette (in Germany)
about 30ml of pomegranate syrup
about 50-80g icing sugar

1) Preheat oven to 180 degrees. Put the grated coconut in a mini pimer and mince it further. Grease the pan and cover it with a bit of the grated coconut. Whisk the butter until creamy, add the sugar and a pinch of salt and whisk until homogeneous. Add eggs one at a time continuing to whisk (about a minute per egg). Sift the flour with the baking powder and add the grated coconut. Then incorporate them to the butter, in two steps, alternating them with the addition of coconut milk. Stir with a spatula until the ingredients are blended. Pour the batter into the cake tin, level and bake for about 40 minutes (do the toothpick test, that should come out clean).

2) Meanwhile, prepare the pomegranate juice: cut the pomegranate in half and remove the seeds, 
extract the juice from about 3/4 of the seeds, with a centrifugal Juicer, and put the others aside. You should get about 200-250ml of juice. 

3) Now, make the pomegranate syrup: Put in a thick-bottomed saucepan the sugar and the lemon juice, dissolve the sugar over low heat and as soon as begins to caramelize, add about 200-250ml of pomegranate juice and make thicken slightly over medium heat.


4) When the syrup will be ready, prepare the pomegranate frosting: whisk the cream cheese, stir in about 30ml of pomegranate syrup and about 50-80g of icing sugar to keep the creamy texture. (I do not know exactly the doses since I did it by eye, it depends on how thick is the pomegranate syrup and the consistency of the cheese used).



5) Remove the cake from the oven, remove the ring and with a long toothpick, do immediately on the surface of the cake many holes almost to the bottom (which will be filled with the pomegranate syrup). Allow to cool.



6) Go over again with the toothpick into the holes and pour on the top of the cake all the pomegranate syrup, in order to fill the holes. Then spread the frosting, with a long spatula, on the surface. Decorate with the pomegranate seeds and coconut flakes. Let the cake rest in the refrigerator at least 3 hours before serving.
