Risotto Finferli e Salsiccia - Risotto Chanterelles and Sausage

Tra le tante cose belle dell'Autunno c'é il ritorno dei confort-foods caldi e dalla consistenza cremosa, tra questi, personalmente, ci sono senza dubbio i risotti. Chi sa dire di no ad un bel piatto di risotto fumante?

A Berlino nelle ultime settimane i banchi dei verdurai ai mercati locali (Wittembergplatz, Winterfeldplatz…) come anche ai supermercati sono pieni di finferli o pfifferlinge (in tedesco), i quali sono stati inclusi in quasi tutti i 'menú del giorno' dei ristoranti. Ho scoperto tra l'altro che in Bavaria questi funghi vengono chiamati "Reherl" (Reh=cervo) perché sembra che i cervi preferiscano mangiare questo particolare tipo di funghi dopo aver partorito! I finferli mi piacciono tanto, unica nota dolente é che sono abbastanza pieni di terra, per cui ci vuole tempo e buona volontà, per pulirli singolarmente con uno spazzolino.

Se mi consentite una piccola divagazione micologica, il regno dei funghi, studiando botanica all'università, mi ha sempre incuriosito tantissimo, essendo organismi con caratteristiche sia del regno animale che vegetale.
I funghi inizialmente caratterizzati come piante, in realtà non lo sono, in quanto hanno una parete cellulare costituita da chitina (e non da cellulosa) e non effettuano fotosintesi (non hanno clorofilla, quella che conferisce alle foglie il colore verde!). Quindi, i funghi a differenza delle piante, non sono capaci di ricavare autonomamente l'energia per vivere, così devono vivere da parassiti o in simbiosi. Si nutrono infatti per assorbimento, secernendo all'esterno enzimi digestivi ed assorbendo i nutrienti rilasciati, ossia sono decompositori. Ecco perché i funghi sono fondamentali nell'ecosistema boschivo ed é bene che la loro raccolta sia regolamentata.


Ma andiamo a noi…..quelli che i funghi ci piacciono tanto!
Oggi vi propongo un gustosissimo classico di questa stagione: Risotto Finferli e Salsiccia.

Ingredienti per 4 porzioni:

350g riso per risotti
200g funghi Finferli
3 salsicce piccole
1 costa di sedano
2 spicchi d'aglio
1 cipolla
1.5l brodo bollente
100ml vino bianco
1 noce di burro
un ciuffetto di prezzemolo tritato
30g di parmigiano

1) Pulire i funghi con uno spazzolino e tagliarli a pezzi grossolani.
2) Far soffriggere in una padella l'aglio, poi aggiungere i finferli e farli soffriggere tra 5-10 minuti. Toglierli e tenerli da parte.
3) Nella stessa padella, sbriciolare la salsiccia e farla dorare circa 5 minuti. Tenerla da parte.
4) Soffriggere in una pentola la cipolla ed il sedano, aggiungere il riso, e farlo rosolare mescolando finché diventa translucido. Sfumare con il vino, appena questo verrá assorbito, procedere aggiungendo con un mestolo il brodo bollente, poco per volta. Mescolare di tanto in tanto.
5) A metá cottura aggiungere il prezzemolo, metá dei funghi e la salsiccia. Continuare ad irrorare con il brodo, mescolando di tanto in tanto fino a cottura ultimata. Regolare di sale e pepe.
6) Mantecare con la noce di burro ed il parmigiano. Servire dividendo nei piatti i funghi rimasti.
7) Sedersi comodamente con un bicchiere di buon vino, rilassarsi e mangiare.

Risotto Chanterelles and Sausage

Among the many beautiful things of Autumn there is the return of hot and creamy comfort-foods. Personally, among them, there is undoubtedly the risotto. Who can say no to a nice plate of steaming risotto?

In Berlin in the past few weeks 
the banks of greengrocers at local markets (Wittemberplatz, Winterfeldplatz ...) as well as in supermarkets, are full of Chanterelles or Pfifferlinge (in German), which have been included in almost all the 'menu of the day' in the restaurants. I discovered, that in Bavaria these mushrooms are called "Reherl" (Reh = deer) because it seems that deer prefer to eat this particular type of mushroom after giving birth! I love Chanterelles, the only annoying point is that, since they are quite full of dirt, it takes time and a good will, to clean them individually with a brush.

If I may make a small mycological digression, the kingdom of fungi, studying botany at the university, has always intrigued me so much, because the are organisms with characteristics of both the animal and vegetable kingdoms.

The fungus initially characterized as plants, in fact they are not, since they have a cell wall composed of chitin (not cellulose) and do not carry out photosynthesis (there isn't chlorophyll, the one that gives to the leaves their green color!). Therefore are not as capable as the plants to get the energy to live independently, so they live as parasites or in symbiosis. They feed by absorption secreting outside digestive enzymes and absorbing the nutrients released, namely they are decomposers. This is also the reason why the fungi are essential for the wooded-ecosystem and it is important that their harvest is regulated.

Today I propose a classic italian delicious dish of this season: Chanterelle risotto and sausage. 




To make a great risotto is really easy and do not take much time.
Just follow the following 3 TIPS:

1) Use rice for risotto, this types of rice are reach in starch that influence the creaminess of the risotto (best risotto rices are Carnaroli, Arborio and Vialone Nano)
2) Never wash the rice before use, you don't want to get rid of the starch
3) Add the stock little by little

Ingredients for 4 serves: 

350g risotto rice (high in starch)
200g chanterelle mushrooms
3 small sausages
1 stalk of celery, chopped
2 cloves of garlic
1 red onion, chopped
1.5l boiling vegetable stock
100ml white wine
1 knob of butter
a sprig of parsley, chopped
30g of Parmesan cheese, grated

1) Clean the mushrooms with a brush and cut into big pieces.
Sauté the garlic in a pan, then add the mushrooms and sauté between 5-10 minutes. Remove and set aside. Remove the garlic.
2) In the same pan, crumble the sausages and fry them about 5 minutes. Set aside.
3) Bring the stock to boil than low the heat to the minimum so that it stays hot.
4) Soften in a pan onion and celery, add the rice and sauté stirring for a few minutes, it will became translucent.
5) Add the wine. Stir and let the wine simmer, than keep adding bits of stock (1/2 cup at the begin, then decrease toward the end of the cooking process) , stirring time to time, until almost all the stock is absorbed (stirring, releases the starch which make the risotto creamy)
6) Halfway through cooking, add the parsley, half of the mushrooms and all the sausages. Continue to add bits of stock, stirring, until "al dente". Season with salt and pepper.
7) Turn off the heat and stir in the butter and Parmesan. Serve on plates, sprinkle with the remaining mushrooms.
8) Sit with a good glass of wine, relax and eat.

    che bel risotto. Lo sai che i finferli sono gli unici funghi che riconosco e mi diverto a raccogliere. Quest'anno ce n'è una marea e in un bosco vicino a cada dei miei nonni ne ho trovati a kg in questo mese. Proprio ieri sera ci ho fatto un risottino. che bontà! per me sono i funghi più buoni del mondo, sarà ch mi ricordo di quando da piccola andavo a cercarli con i miei nonni. Totalmente confort food!

  10. ooohhh, son gia' arrivati i finferli in Germania!!! che bellezza.... qua c'e' solo un negozio che li vende e a fine settembre ci vado ogni 3-4 giorni per vedere se sono arrivati. che ricettina fantastica, questa te la rubo e la faccio a mio marito, a lui verra' l'acquolina solo a sentir dire le due parole finferli e salsiccia!

  14. Adoro i mercatini tedeschi... mi ci perdevo camminando e comprando sempre tanta roba! E ci scappava anche il Bratwurst... Berlino è bellissima l'ho visitata a Natale del 2009 sotto la neve! Ti svelo il mio segreto: sono nata in Germania a WOB, die Volkswagenstadt!! ;-) adesso vivo in Sicilia ma porto la Germania nel cuore... Buono il risotto!!
